Cold pressing is the food preservation method with the aid of high pressure. It allows to extend its shelf life without the need to use preservatives. The food preserves its nutritional value and taste that is the greatest advantage of cold pressing method over heat treatment. It is crucial especially in the case of juices, vegetables, fruits, meat and other products.
On February 5, 2025, a letter of intent was signed in Piotrków Trybunalski initiating cooperation between the Institute of High Pressure Physics of the Polish Academy of Sciences, the Łukasiewicz Research Network - Łódź Institute of Technology and the Piotrków Academy in the field of developing innovative processing technologies that will increase the shelf-life of food products based on high-pressure methods.
Under the signed agreement, the Institute of High Pressure Physics PAS will build a modern cold pressure equipment, which will be used, among others, by students at the technical and agricultural faculty at the Piotrków Academy. Łukasiewicz – Łódź Institute of Technology brings to the project experience in research on technologies for the food industry, having modern laboratory facilities and expert scientific staff.
The cooperation agreement was signed by: dr hab. Jacek Bonarek, prof. AP - Rector of the Piotrków Academy, prof. Michał Boćkowski - Director of the Institute of High Pressure Physics PAS, Hubert Cichocki - President of the Łukasiewicz Center and dr hab. Marcin Górski - President of the Łukasiewicz Research Network - Łódź Institute of Technology.
